Drive west from Oswestry, in Shropshire and within a few minutes you round a corner to be plunged unexpectedly into a roller-coaster of steep hills and deep valleys. And there, presiding over the ancient border of Offa's Dyke, is Pen-y-Dyffryn, a haven of good food and hospitality. The hotel's new owner Mike Whetton is determined to maintain the remarkable combination of comfort, ambience, service, style and quality that is Pen-y-Dyffryn. The bedrooms are well appointed with smart bathrooms, some with spa baths. The rooms in the adjoining Coach House, which have their own patio areas, are especially appealing in summer and for guests with pets. Good food is also part of the Pen-y-Dyffryn experience. A new menu every night is based on the highest quality &endash; and mostly local &endash; ingredients that form the basis for innovative cooking.
